Don't we all love salmon in our Yee Sang, the most vital dish to our Chinese New Year meals - to usher in good luck and prosperity for the new year? We were lucky to have a session with Chef Jimmy Chok on how to prepare healthy dishes for the festive season! Here are some healthy recipes and tips on how to cook salmon to perfection.

Norwegian Salmon Yu Sheng (serves 10)

It tastes fresh and not too sweet like your conventional yee sang!

  • Slices of raw Norwegian salmon
  • Carrot, white radish and green radish, julienned
  • 1 packet of Enoki mushroom
  • 100g roasted salted peanuts
  • 1tsp white sesame seeds

Slice into thin strips:

  • 80g Japanese pickled red ginger
  • 80g Japanese pickled yellow daikon
  • 80g dried mango
  • 80g dried figs
  • 80g dried apricot
  • 80g dried cranberry
  • 80g dried pineapple
  • 3 pieces kaffir lime leaf, cut into fine threads
  • 1 ginger flower, cut finely
  • 200g pomelo, peeled fruit
  • 80g pomegranate, peeled
  • 1 packet Thai crackers
  • 150ml olive oil
  • 80ml lime juice


  • 260gm plum sauce
  •  1 ½  tbsp honey
  • 3 tbsp rice vinegar


  1. Arrange all the vegetables, fruits and dried fruits attractively on a large plate.  Top with kaffir lime leaf shreds, ginger flower.
  2. When ready to toss, add crackers, salmon, lime juice, oil and plum sauce mixture.  (You can add less of the liquid ingredients according to your preference)
